Paneer Manchurian

Paneer Manchurian is popular and delicious Indo Chinese appetizer made with fried paneer cubes tossed in sweet and sour manchurian sauce. Its basically an adapted version of chinese cuisine to meet the requirements of Indian taste.
It is a 2 step process, firstly paneer cubes are coated with corn flour and maida batter, which is deep fried in oil or fried in airfryer to cut down the calories. Secondly it is tossed in manchurian gravy which is mix of soy sauce, tomato ketchup, vinegar added to sauteed onion, capsicum, ginger and garlic. Corn flour slurry is added so the sauce coats on to fried paneer. In this recipe I have made semi-gravy version. Increase the amount of slurry and sauces to make it gravy version.

If using frozen paneer cubes, defrost and soak in hot water until soft. In a bowl take maida, corn flour, pepper powder, chili powder, and salt. Add water and prepare a smooth lump free medium-thick batter. Add in drained paneer cubes and coat gently.

Preheat air fryer at 180 degC for 2 minutes and brush the basket with oil. Place the batter coated paneer cubes in the airfryer basket and airfry for 4 mins. brush with oil, flip and airfry for another 5-6 minutes until crispy. Alternatively deep fry the paneer cubes until golden and crispy. Air-fry the paneer cubes in batches and remove onto a plate.

Meanwhile chop the required veggies, in a bowl prepare corn flour slurry by mixing 1 tbsp corn flour with 1/2 cup water.

In a wok heat oil. Add in finely chopped ginger, garlic and saute until aromatic without browning it. Add in cubed onion, capsicum and saute for a minute. Add in white spring onions if available.

Add in soy sauce, tomato ketchup, and corn flour slurry. Stir and let it come to boil. Add water to adjust the thickness of the gravy. Add in sugar, pepper powder, vinegar, salt and mix.

Once the sauce thickens to desired consistency, switch off the flame. Add in fried paneer cubes and toss well to coat evenly.

Serve hot Paneer Manchurian as a starter or along with Fried rice/noodles
