Ingredients

  1. 2 cupsflour
  2. 2 cupsbrown sugar
  3. 1/2 cupvegan butter, I used Country Crock plant butter
  4. 1/2 cupchopped nuts
  5. 1/2 cupdates or raisens
  6. 1egg
  7. 1 cupsour dairy free milk, See step 2 on preparation for sour
  8. 1/2 tspsalt
  9. 1/2 tspvanilla
  10. 1 tspbaking soda

Cooking Instructions

    Preheat oven to 350f

  2. 2

    To make sour milk in a measuring cup add 1 tablespoon of lemon juice OR vinegar. Add your milk, taking it to the 1 cup line. Let stand 5 minutes.
    *this is critical or your cake will not rise properly, as we are developing a chemical reaction to make the cake rise

    In a bowl, mix flour and brown sugar. Cut in butter, making a crumb like mixture

    Remove 1 cup of sugar mixture and set aside

  5. 5

    Add egg, salt, vanilla, milk. Mix well

  6. 6

    Grease and lightly flour a 9x9 pan

  7. 7

    Pour batter into the cake pan, spreading evenly

  8. 8

    Take a bowl and mix nuts, fig/raisens and the 1 cup of brown sugar mixture

  9. 9

    Crumble on top all over the cake

  10. 10

    Bakr 40min, or until done
