Ingredients

  1. 6 ozSpaghetti Pasta
  2. 8 ozGround Beef
  3. 1/4 ozCilantro
  4. 1/2Red Onion
  5. 1/2Vine Tomato
  6. 4 ozSweet Corn
  7. 2 ClovesGarlic
  8. 2 tbspUnsalted Butter
  9. 1 tbspOlive Oil
  10. 1 tbspLime Juice
  11. Salt and Pepper, to season

Cooking Instructions

    Dice tomato, onion, and garlic. Finely chop cilantro.

    Bring a medium pot to boil with water and salt. Add pasta and boil until al dente. Remove and strain.

    While water boils, add ground beef to skillet under a medium-high heat. Season with salt and pepper and cook until browned. Remove from pan and let strain.

    With same skillet, add olive oil and toss in garlic. Cook until fragrant, about 60 seconds. Toss in onion and continue to cook until translucent.

    Toss in corn and continue cooking until both onions and corn are slightly charred. Season with salt and pepper.

    Toss in butter and let melt. Just before all is melted, toss in drained pasta and mix together.

    Add in cooked beef and tomatoes. Continue tossing together until we’ll mixed.

  8. 8

    Finally toss in cilantro and lime juice. Season with salt and pepper. Finish tossing and remove from heat.

    Plate in center of bowl.

  10. 10

    Serve and enjoy!
