Place the masa harina in a bowl. Gradually add hot water to the masa harina, mixing a little at a time. If you add too much water, just add more masa harina and knead well until the dough is firm and your fingers leave an impression in the dough.

Make a ball of dough about the size of your hand. Place a clean piece of plastic (you can use a plastic bag cut open) on the tortilla press. Put the dough ball in the center, cover with the plastic, and gently press to form a thick tortilla.

The tortilla should be a bit thick. To keep it even, rotate it so it’s the same thickness all around. Place it on a very hot griddle or skillet and cook, flipping until fully cooked. While still warm, carefully pinch the edges with your fingers to form a border (be careful, it's hot). Set aside. Finally, fry the sopes in oil and they're ready to enjoy with your special person.

For serving, top with refried beans, lettuce, the fried chorizo or longaniza, and anything else you like. This is just a suggestion.
