This recipe by Benedetta Rossi, which I have adapted with a few modifications, has been a great help with my daughter who, like many children, doesn't like to eat legumes and vegetables.

Cooking Instructions

Beat the eggs with the sugar, then gradually add the oil and honey, and finally the baking powder. Add the three types of flour, making sure to incorporate the almond flour last.

Continue mixing and add the chocolate chips. You will get a fairly dense dough.

Form fairly large balls, flatten them, and place them on a baking sheet lined with parchment paper. Bake at 350°F for 15-20 minutes.

I originally made these cookies with kinako, but lately I have been making them with barley flour instead.Caution: The ingredients are adjusted to suit barley flour. Making these with kinako requires different amounts and processes, so be careful!Step 2: It's rather difficult to clump the dough together, so you can add a little bit more soy milk if you like. That limits on what ingredients I could use so I gave up on making them crispy and decided to switch gears and make them chewy. So I made these.
