Crispy Bread Flour Cookies

When making some chocolate bread, I forgot to add the water into the bread maker and it came out crispy like a cookie.
The dough will be different depending on the kind of bread flour and chocolate you decide to use.
If the dough becomes sticky, add some more bread flour. If it becomes powdery, add some vegetable oil.
If you let the dough chill for too long, it will harden and become too difficult to cut!!
If you force it while cutting, the dough will crumble. Recipe by okeipon

Cooking Instructions
- 1
Put the chocolate into a heatproof bowl and melt in the microwave at 500 W for 1 minute and 30 seconds! It's okay if some of the chocolate doesn't melt.
- 2
Mix well with a rubber spatula. The residual heat will melt the rest of the chocolate. If it doesn't melt, microwave at 10 second intervals until it has completely melted.
- 3
Add 1 teaspoon of vegetable oil, add the bread flour, and mix together. You do not have to sift the flour.
- 4
Add the chocolate chips and mix. Bring the dough together. If it's still powdery and you can't bring it all together, add a little vegetable oil at a time. Be careful not to add too much!!
- 5
Wrap in plastic and make into a log about 15 cm long. Let chill in the refrigerator for about 5 minutes to harden a bit. Be careful not to let it harden for too long!!
- 6
Slice into 1.5 cm thick slices. It should make about 12 pieces.
- 7
Arrange on a cookie sheet. Bake at 180°C for 10 minutes. If the cookies don't seem to be thoroughly baked enough, bake for another 1-2 minutes.
- 8
The finished product.
- 9
This is the white chocolate version!

Sublime Cookies with Bread Flour and Cornstarch Sublime Cookies with Bread Flour and Cornstarch
I experimented so much until I've finally put this recipe together!!With these cookies I wanted to use up the remaining bread flour from baking bread or pizza crust.Using just bread flour makes the cookies fairly hard. That's why you add cornstarch (or katakuriko) - it makes the cookies crunchy and crumbly. If you roll out the dough as instructed in Steps 3 and 4, you'll have fewer things to wash. Sweet and Fluffy Honey Cookie Bread Sweet and Fluffy Honey Cookie Bread
I wanted to make a bread that would be a hit with the kids, so I came up with a strongly honey flavored cookie bread. Both the bread dough and the cookie dough have lots of honey in them! When freshly baked these are very crispy, and after some time they turn soft and tender. They're not just popular with kids, they're a hit with adults too! There's a generous amount of cookie dough in the recipe, so you can use a lot of it as topping. When the buns are still hot out of the oven you can't really taste them properly, so wait until they have cooled down a bit so that the cookie part is crispy. ♪ When the buns are completely cooled they become soft and moist. If you warm them up a bit in a toaster oven, they'll become crispy again! Recipe by Toiroiro cookpad.japan -

Melon Bread-Style Avocado Cookies Melon Bread-Style Avocado Cookies
I based this recipe on a recipe for kabocha squash cookies. I avoided butter and eggs and instead used vegetable oil to highlight the taste and the color of the avocado. The result is a healthy cookie well-flavored with avocado. The pretty color, together with the melon bread shape, makes this a very charming treat. While these cookies are very easy to make, they use a special baking technique.I came up with this technique in order to allow the cookies to retain their pretty color and to brown nicely. Please watch the oven carefully and adjust the baking time and temperature to suit your oven. Chinsuko (Okinawan Cookies) with Cake or Bread Flour Chinsuko (Okinawan Cookies) with Cake or Bread Flour
I've made these many times using cake flour, but since I had leftover bread flour, I used bread flour instead. To my surprise, the bread flour version turned out to be tastier than the cake flour version. The cookies will be pipping hot right out of the oven, so be cautious when snacking on them!! When using bread flour, increase the amount of olive oil. If the cookies start to burn, turn off the heat and cook with the residual heat. I used beet sugar and olive oil, but you can use plain sugar and vegetable oil. Recipe by Nyagao cookpad.japan -

These are a simple but yummy and filling breakfast for busy mornings. They would also make a great snack or a healthy dessert. They are soft and chewy, more reminiscent of bread than a cookie. You could always substitute the nuts for dark chocolate chips, if you're feeling indulgent. Christina -
