Now that we can find Romanoff caviar or Icelandic caviar on the internet for $12 a jar, we can treat ourselves to Blini appetizers, and so can you! Blinis are silver dollar sized pancake appetizers topped with caviar, chopped shallots and sour cream, served warm.
Cooking Instructions

Bake silver dollar size pancakes: Activate the dry yeast in 1/2 cup of scalded cooled milk and the sugar. When foaming, add 1/2 cup of buckwheat flour mixed with 1/2 cup of white flour and tsp of salt. Let rise 1/2 hour. Beat 2 eggs, add the rest of the milk, add to batter. Add 3 Tbs clarified butter. Let rise an hour. Put drop of melted butter under each tsp of batter in heated cast iron pan, bake one minute, flip, bake one more minute. Keep warm.

Hint: to make 1/2 cup of clarified butter, melt 1 stick of unsalted butter slowly, do not overheat, there is water in butter that will sink to bottom, and milk foam that will float to the top. Sieve off foam, pour butter carefully into measuring cup, leave water on bottom to avoid splatter. Put batter in pan:

Top the Blinis: Blinis should be crispy on the outside, soft on the inside. Butter blinis with sour cream, paring knife point of chopped shallots, caviar on top, dip knife point in clarified butter, drip few drops of butter on top of the caviar, serve on heated plate.

There are special cast iron pans to make small pancakes. On amazon, they are called poffertjes pans or takoyaki pans or ebelskiver pans, for kids who love mini pancakes with powdered sugar. I use that special pan to make blinis. Enjoy!
