Pithala and Bhakri (पिठलं आणि भाकरी)

This is a traditional recipe of Maharashtra which is rich in nutrition, and is a complete meal. Pithala is a spicy , flavour rich curry made from begal gram flour I.e. besan with onions, chillies, garlic and spices. Its served piping hot with Bhakri which is a skillet roasted sorghum millet flat bread. The combination is heavenly and a must try.

First,let's make the Pithala: Make a paste of besan, 1 cup water, ajwain seeds and salt. Break all lumps and whisk well. Keep covered.

Heat oil in a karahi or wok. Add mustard seeds, cumin seeds and splutter them. Then add onions, garlic, chilles and hing and saute' well till onions are translucent.

Now add curry leaves, turmeric powder, Chilli powder, cumin and coriander powders and mix well.

Add the besan Mix and keep stirring. Add more hot water Cook on low flame till the mixture becomes thick and shiney. After 5 minutes, adjust the seasonings and switch off flame.

Keep hot till serving. Keep stirring in between to avoid formation of layer on top.

To make Bhakri (flatbread of millets)
Take a large bowl. Add the jowar flour. Add salt and jaggery powder. Mix well. - 8

Add hot water in small batches to combine the flour and bind it in dough. Keep covered for 5 minutes.

Heat a skillet. Then take a big ball of dough and flatten it on any platform using dry millet flour.

Gently lift up and place on skillet. Sprinkle some water on top surface and smear it all over the Bhakri. This will keep it soft.

Turn over and cook the other side. Prepare all the Bhakris in same manner. Apply some gheeon top of each Bhakri to keep it soft.

Serve hot with Pithala, onion slices and green chillies. Serve some butter, garlic chutney on sides for added taste. Enjoy healthy and Nutrition rich meal!
