Ingredients

45 minutes
  • Fresh fish of any type - 3.3-4.4 lbs per fish
  • 2 cupsbone broth
  • 1.3 lbsfresh rice noodles
  • 3/4 cupfermented rice vinegar
  • 5tomatoes
  • 1 bunchdill, green onions, assorted fresh herbs
  • Basic seasonings (salt, fish sauce, sugar, pepper, chili powder)
  • 1 tsptempura flour, 1 tsp turmeric powder, 1 tsp ginger powder

Steps

    Debone the fish, clean, and cut into desired pieces.

    Mix tempura flour, chili powder, ginger powder, turmeric powder, and 1 tsp salt to coat the fish (this prevents oil splatter and makes the fish very crispy).

    Fry the fish on high heat. Note: Fry one side thoroughly before flipping.

    Prepare the broth: Slice tomatoes into wedges and sauté with fragrant shallots. Then add the fish heads and bones, bring to a boil. Once boiling, add the prepared bone broth. Season to taste. From here, reduce to low heat. Simmer for about 30 minutes, then add the fermented rice vinegar just before turning off the heat. Note: Do not let the broth boil too much and keep the pot lid slightly open.

    Sweet and sour dipping sauce: 1 tsp fish sauce, 1.5 tsp sugar, 1 tsp white vinegar, half a lime, 3 tsp boiling water. After mincing garlic and chili, squeeze half a lime to help them float, making the dipping sauce look more appetizing. Pour boiling water into the fish sauce, then add sugar and vinegar, stir well, and finally add the garlic and chili.
