First Up: Wash & Cut up the veggies to get them ready for the next following procedures…
Heat up a frying pan over medium flame: Add in the oil & butter admixture (that’s what I usually do while preparing any creamy soups, you use your own discretion)-
Once that’s hot- Throw in the veggies one by one & sauté until they’re all transparent and turn aromatic - 2
Add in the seasonings & dry herbs & spices-
Mix everything well together until nicely combined and well blended to be finely incorporated-
Once that’s done- In goes the milk, mix well (flame to be either at the lowest at this point or turned off & then, post mixing it well then turn it on again)- This ensures, the milk won’t curdle while mixing due to the temp. differences - 3
Allow it to cook for at least 10-12 mins for the veggies to be soft & well cooked-Once, the soup mixture’s thickened substantially, add in the cheese slices pieces to it & let it melt properly-
This would help the mixture to turn thick, creamy & smooth in its texture-

Once done turn off the flame and let it cool down properly before blending into the thick soupy purée and again, transfer it back to the same pan where it’d been cooked initially (this I do, in order to retain all its flavours absolutely intact in it until it’s completely well cooked & done)-
Add in some more warm water to it, in order to adjust its consistency, since post puréed it’d be extremely thick - 5
Mix everything well together until nicely combined and well incorporated-
In goes some more freshly cracked black peppers & sprinkles of paprika, finely chopped coriander leaves, giving it all a very good mix together-
Checkout the seasonings at this point and adjust accordingly, if necessary - 6
Turn off the flame and cover it for sometime in its standing position for another 5-6 mins time before serving it piping hot with your choicest condiments with it to accompany-
Either in your Breakfast, Lunch or Dinner Tables-
Transfer it to a separate Soup Bowl/s, & arrange your platter accordingly - 7
