I had some chives on hand.
Adjust the seasoning amounts to taste. (Feel free to use leftover sauce from other dishes.) Here's a version using a thick sauce Recipe by Panko625
Steps

Wash the chives and cut into appropriate lengths. Combine the ● ingredients. Beat the eggs, and season with salt and pepper. Combine the ○ ingredients.

Heat 1 tablespoon oil in a pan. Once heated, add the egg and stir quickly over high heat. Remove the egg before it cooks through.

Over high heat, add a little oil and fry the chives and most of the ● mixture from Step 1 (leave a small amount for the finish).

Add the half-cooked eggs and mix. Add the leftover sauce to taste.
