Ingredients

  1. 3Large Ripe Plantain
  2. 150 gsliced Vegetables (I used Ugu
  3. 1/2 cupblended pepper mix (tomatoes/scotch bonnet/chill
  4. 1/4 cupVegetable oil
  5. Palm oil
  6. Shredded Fish (Smoked fish)
  7. 1 cubeKno chicken
  8. lucus beans
  9. onion
  10. 500 gramlong grain white Rice
  11. 600 mlwater

Steps

    Chop up your plantains and deep fry till it’s almost turning brown and set aside.
    allow palm oil to heat up, add lucus beans and Onion fry slightlypour the pepper mix, and add fish,pomo, crayfish to the pepper from the start. Cook for 5 mins

    On medium heat, cook the stew till the water has completely reduced add your bouillon cubes and salt. Cook with lid on.
    Once the water has completely reduced, vegetable. Cook for about 5 minutes with the lid off.
    Stir in the fried plantains and let it simmer for about 2 mins and turn the heat off.

    Now, pour the 600ml of water into a pot and let it boil, until it starts to bubble.
    Pour in the parboiled Rice and salt, mix thoroughly and leave to boil on medium heat, until the rice is done cooking.
    Tip: the trick is to make sure that the water in the pot is very hot and at the same level as the rice.
    The rice should be tender without becoming soggy.
    If the rice is still hard after the water has dried up, add just a little water and simmer on low, until done. enjoy with plantain Veggies
