Stir Fried and Candied Diced Kabocha Squash and Soy Beans

I love candied Japanese sweet potato. I had some leftover soy beans, so I thought I'd try them with kabocha squash with that kind of flavor.
You can use just honey or just sugar. I'd recommend choosing honey if you want to use one or the other.
I've written down 2 tablespoons each, but that's just a guideline. Add however much you like!
I think that it tastes better if you flavor it generously. Recipe by pomu:

Cooking Instructions
- 1
I used about this much soy beans. I used soy beans cooked in water.
- 2
Peel the kabocha squash and cut it into small dice about the same size as the soy beans.
- 3
Microwave the kabocha squash for 90 seconds at 600 W. If a bamboo skewer goes through a piece easily it's done! Microwave the kabocha squash skin at the same time, and you can eat it too.
- 4
Put the kabocha squash and soy beans in a frying pan. Dry-roast to evaporate the excess moisture on them, then add the honey and/or sugar and mix to coat everything.
- 5
When everything is well coated with the honey/sugar, add the soy sauce and mix well. Add a little salt and black sesame seeds, and simmer down. Transfer to a serving plate and it's done!

For Flavor-Boosting, Stir-Fry First! Stewed Kabocha Squash For Flavor-Boosting, Stir-Fry First! Stewed Kabocha Squash
When we lived with my mother-in-law she would make this often. The flavor is stronger than store-bought stewed kabocha--a bold sweet and salty side dish that goes with rice.Ever since I learned how to make it, it's been a standard in our home.Adjust the amount of seasoning to taste depending on the size of kabocha. Heavy seasoning is better than light.Simmer until the kabocha glistens. As a general rule of thumb, I don't remove the skin--only where it's damaged. Recipe by moj cookpad.japan -

Stir-Fried and Simmered Eggplants, Green Beans and Deep-fried Tofu Stir-Fried and Simmered Eggplants, Green Beans and Deep-fried Tofu
This is a simmered dish that my mother made when I was small. When I was young, I found it less appetizing because the green peas and aburaage were drenched in the color of the eggplants. Now this is the sort of Japanese flavor that makes me homesick when I am overseas. I tried to reproduce this nostalgic dish by asking my mother for instructions.1. Make sure to chop the eggplants into large pieces. They break apart and dissolve if they are too small.2. Stir-fry the green beans first so that the eggplants don't soak up too much oil.3. My mother's simmered dishes - like this one - uses high heat and needs to be flavored quickly, so make sure to check the amount of water in the pan occasionally.4. If the flavor is allowed to soak in too long, the color may become less appetizing. Recipe by PARNELL cookpad.japan -
