Stir-fry Squash and eggplant

A budget recipe for lunch or dinner

Ingredients

  1. 1/4of a medium sized squash
  2. 3medium sized eggplant
  3. 1/4kilo minced meat
  4. 1small onion
  5. 2tomatoes
  6. 2and 1/2 cups water
  7. 5garlic scapes
  8. 2 tablespoonolive oil
  9. to tasteSalt, fish sauce, pepper

Cooking Instructions

    Chopped the onion, garlic and tomatoes

  2. 2

    Cut the eggplant and squash into cubes

  3. 3

    Boil squash in water until tender in a separate cooking pot

  4. 4

    In a separate pan, add oil and sauté garlic, onion and tomatoes. Add the meat. Cook until the meat turns golden brown.

    Add water from the boiled squash. Bring to a boil then add the squash. Stir.

  6. 6

    Add in the eggplant. Add salt, pepper and fish sausce to taste.

  7. 7

    (Optional) Partner it with fried dried anchovies
