Gather all ingredients.

Boil water, add the rice vermicelli, and cook for 1 minute. Remove and drain, then place in a bowl. Cover with a lid to let the residual heat make the vermicelli chewy without becoming mushy.

In a wok, heat 1 tablespoon of oil. Sauté the pork belly until fragrant, then add garlic, shallots, dried shrimp, and shiitake mushrooms. Stir-fry until aromatic. Add pumpkin and cabbage, stir-fry evenly, then season with soy sauce, rice wine, and salt. Pour in the mushroom soaking water and about 2 cups (500 ml) of water, and simmer for 5 minutes.

Add the rice vermicelli and mix well.
