This Masa is only one part in the tamale making process. Our family made four batches in two days, creating our new holiday "Tamale Weekend."

In a large bowl, mix the maseca, salt, and baking powder.

Massage lard into the dry ingredients until incorporated and crumbly.

Make a well in the middle of the dough and gradually add warmed stock from the protein you prepared and the chile sauce. Wear gloves and continue massaging together. You can also mix using a KitchenAid, in batches. Keep adding liquid until it's not sticking to your fingers. Make a small ball and in a glass of water see if it floats. If it floats, it's ready.

For vegetarian, exchange larde for 2 lb of cristco. Exchange protein broth with warmed vegetable broth and your favorite vegetarian chile sauce.
