I love chestnut rice but I prefer it lightly salted.

Soak the chestnuts in hot water for an hour.

Remove from the hot water, peel the shells and inner layers, and soak in water in the order peeled (until you've peeled them all.)

Put the washed rice, sake, mirin, and salt into the rice cooker. Add water up to the white rice 2 cup line and give a light stir.

Scatter the chestnuts on top of everything and leave to soak for 30 minutes. Then switch the cooker on as usual.

When it's done, mix, and serve! Avoid crushing the chestnuts when you mix!
