Potato and Chorizo Patties

Wash and peel the potatoes, then cut them into cubes. Melt the 2 tablespoons of butter.

In a pot over medium heat, cook the potatoes for 25 minutes or until soft. Season with salt. Drain and set aside.

In a skillet, cook the chorizo over medium heat for 5 minutes or until browned.

In a bowl, mash the potatoes with the melted butter until smooth. Add the onion, garlic, breadcrumbs, cornstarch, egg, cooked chorizo, salt, and pepper. Mix until well combined. Shape the mixture into patties with your hands.

Beat the egg in a bowl. Place flour and breadcrumbs on separate plates. Coat each patty first in flour, then in egg, and finally in breadcrumbs.

In a skillet with enough hot oil, fry the patties over medium-low heat for 5 minutes or until golden brown.

Serve on a plate and enjoy.
