Cooking Instructions

Clean the peppers, wash them on the outside, cut a horizontal piece from the top, and remove the seeds. Clean the tomatoes, wash them on the outside, cut a horizontal piece from the bottom, and scoop out the flesh with a spoon. Keep the flesh and blend it.

In a pot, heat half of the oil and sauté the onion with the carrot. Once softened, add the ground beef, sauté, and break it up until it lightly browns.

Add the tomato flesh and spices.

Let simmer for 10 minutes over medium heat. Wash the rice and add it to the pot. Stir to prevent sticking and add the parsley and mint.

Simmer for 10 minutes, then remove from heat.

Stuff the tomatoes and peppers (not all the way to the top, as the rice will expand during baking) and place them in a baking dish with the cut potatoes in between. Salt the top and drizzle with the remaining oil and 1 cup of tomato juice.

Preheat the oven to 390°F. Add a little water to the baking dish and place it in the oven. Lower the temperature to 355°F and bake for about 1 hour.

Serve hot with some feta cheese and strained yogurt.

I know some people make it without meat, but we like it to be hearty.
