Had too much V8 juice, so...
I'll confess also that I didn't really measure the volumes of liquid that went into the soup, but will do my best.
Easy and quick comfort meal. Can double the recipe for more servings.

Ingredients

2-3 servings
  1. 3 ozcarrots (can be baby carrots, for ease)
  2. 1-2 stalkscelery
  3. Quarter of an onion
  4. 2 clovesgarlic
  5. Halfa can of cannellini beans
  6. 2 tablespoonstomato paste
  7. 1.5-2 cupsunsalted chicken broth
  8. 1.5-2 cupsV8 juice
  9. ~1 tbsp Worcestershire sauce
  10. 2servings of dried pasta of your choice
  11. Aromatics of your choice (see below)
  12. Salt and pepper, to taste
  13. Optional: Cubed ham, other vegetables or meats
  14. other vegetables or meats

Cooking Instructions

    Cut up the carrots into half-inch cubes and thinly slice the onions and celery. Grate your garlic (or mince finely).

    Heat a pan with olive oil, then add your mirepoix with salt and pepper. (At this juncture, can add other optional vegetables or meats). Sweat your vegetables over medium heat for 3-4 minutes (add the garlic midway through). Then stir in the tomato paste and cook for another couple minutes.

    Add your unsalted broth to deglaze the pan, then add the V8 juice, Worcestershire sauce, beans, and aromatics (I added healthy dashes of dried oregano, dried basil, smoked paprika, and chipotle powder).

    Bring to a boil then let simmer (lid on) for at least 30 minutes. Once the veggies have started to soften, add the pasta (plus a little extra water, if the soup is starting to run thick). Can cook it past al dente for this soup.

    Taste and season more if needed.
