I made this for my tarako-loving son and my drink-loving husband.

I used 2 small pieces of tarako for this. Add a little bit at a time until it turns the color you like.

Ingredients

4 servings
  • A
  • 2Potatoes
  • 50 gramsTarako
  • 2 tbspMayonnaise
  • 2 tbspMilk or heavy cream
  • B
  • 2Eggs
  • 1/2 tbspShiro-dashi
  • 1 tspMirin
  • 1Vegetable oil
  • C
  • 1Broccolini (blanched in salted water)

Steps

  1. 1

    Prepare the A ingredients.

  2. 2

    Steam the potatoes until soft and mash with a large spoon or potato masher until smooth.

  3. 3

    Peel the membrane of the tarako and add to the mashed potatoes with mayonnaise, milk, salt and pepper.

  4. 4

    Prepare the B ingredients.

  5. 5

    Beat the eggs and mix in the shiro-dashi and mirin.

  6. 6

    Heat oil in a frying pan and quickly scramble the eggs. They taste better if you don't cook them too long and are soft-set.

  7. 7

    Put the circular molds on plates, fill with the taramosarata and put the scrambled egg on top.

  8. 8

    Remove the molds and garnish with the boiled broccolini.

  9. 9

    They look a bit different arranged in a large bento box.
