Carrot halwa is luscious and delectable. Especially when made from red juicy Pakistani Carrots. It is popularly made in winter season. Be patient while making it as it consumes time, quite alot.

Grate or chop the Carrots. In a pan take milk, oil and cream. add grated Carrots to it. Add 1 tsp fresly ground green cardamom powder. Cover and cook on low flame until milk has evaporated. Keep the centre empty so that you can watch easily how milk milk is still left.

Keep checking from time to time while cooking on low flame until most of the milk has evaporated and leaves oil.

Once it's completely evaporated add sugar. I had to add 2.5 cups as the sugar here is not very sweet. You can adjust according to your taste.

Now keep stirring on medium flame until water has evaporated and oil comes on the surface. Garnish almonds and pistachios or nuts of your choice. Serve hot.
