Easy Daikon Radish Kimchi Stock

Since I was making kimchi stock, I thought I may as well make daikon radish kimchi, too!

This is easier than normal kimchi stock because it's done in the food processor. If it isn't spicy enough, add chilli powder. If it needs more salt, add more Nam pla Thai fish sauce, soy sauce, or salt. Recipe by pabotvxq

Ingredients

  1. Ingredients for the food processor
  2. 8cm Daikon radish
  3. 1/2Apple
  4. 1/4Onion
  5. 1/2Carrot
  6. 1thumb's worth Ginger
  7. 1 cloveGarlic
  8. Seasoning ingredients:
  9. 1 tspSesame oil
  10. 1 tbspWhite sesame seeds
  11. 10 gramsSugar
  12. 1 tbspKombu dashi stock
  13. 1 tbspScallop or bonito dashi
  14. 1 tspSalt
  15. 30 gramsKorean chilli pepper (finely ground)
  16. 1 tbspSoy sauce
  17. 1 tbspFish sauce
  18. Added before mixing with daikon
  19. 1/2Japanese leek
  20. 1/5of a bunch Chinese chives

Cooking Instructions

  1. 1

    Blend the daikon, carrot, apple, onion, ginger, and garlic in the food processor.

  2. 2

    Here it is mixed.

  3. 3

    Add the flavouring ingredients to the processed mixture, and combine to complete the daikon radish kimchi stock.

    Mix the leek and chives in when combining the stock and daikon radish.
