I received a bunch of leek, carrots and onions in my veg box today from Plowright, Bristol and I decided to cook this simple and easy Syrian dish called Kurrat/Barasya.

Start by rinsing the leeks, then slice them lengthwise, chop, and wash in a colander under cold water. Use your hands to separate the leek slices and let water run through each and every slice. Then soak in cold water for 10 minutes while preparing the other ingredients.

Roughly chop the carrots, onions and garlic.

In a pot, add oil or ghee and cook the ground lamb. Add the black pepper, paprika and allspice (not the salt yet)

Change the water for the leek. Rinse and soak again in cold water.

When the meat is cooked add the carrot, onion and garlic. Cook until semi soft on medium heat.

Drain the leek and add it to the pot with the other ingredients, salt and 1/2 cup of lukewarm water.

Cover with a lid. Keep on medium heat and let the ingredients get to know each other inside the pot 🤗 leave to simmer for almost 10 - 15 minutes until half the water has evaporated. Remove from heat.

Add a squeeze of lemon if you like and serve with bread. Bon appétit!
