Ingredients

20minutes + 40 minutes oven

  1. Fruit and Vegetables
  2. 1red bellpepper
  3. 1eggplant
  4. 1zucchini
  5. 1/2cucumber
  6. 10cherrytomatoes
  7. 100 gpomegranate seeds
  8. Spices and condiments
  9. 2 clovesgarlic
  10. 150 gGreek yoghurt
  11. 3 tbspOlive oil
  12. 10 gfresh dill
  13. salt and pepper
  14. Other
  15. 400 gfalafel
  16. 100 feta cheese
  17. 4Lebanese flatbreads

Cooking Instructions

20minutes + 40 minutes oven

    Wash all your veggies. Cut the eggplant, zucchini, onion, and bellpepper in thin strips. Mix this with the tomatoes, some olive oils, salt and pepper. Roast in the oven for about 40 minutes on 200c.

    While your veggies are roasting, it's time to make the tzatziki:
    Mince the garlic and grate the cucumber, and mix this with the greek yoghurt, 2tbsp olive oil, dill, and pepper and salt to taste.

    When the veggies are almost done, bake your falafel as described on the packaging.

    Thickly spread some tzatziki onto each flatbread. Divide the roasted veggies and falafel over the breads.

    Last but not least: sprinkle some pomegranateseeds and feta on top. Bon appetit!
