Saffron or Kesar Cookies are a treat to our tastebuds. They are rich and delicious goodies perfect for a filling Breakfast or a satisfying Brunch or even an accompaniment with Tea at Tea-time or Shaam ki Chai.
They are just perfect on any day at anytime or even anywhere. You will just love to dig into these cruncy and beautiful Cookies.

Enjoy these with some Hot Chocolate or a hot or cold beverage of your choice. It's pure bliss. I must add that this is pure ecstasy.
The colour and the texture are just awesome. These are a bit soft yet crunchy. Not overly sweet or savoury. These are just perfect for everyone.
For those perfectly crunchy and crisp Cookies, you just need to bake them a little longer. Plus use of normal granulated White Sugar is to be kept in mind. Brown Sugar is used for more softer and chewy Cookies.

Ingredients

25-30 minutes
10-12 servings
  • 1 3/4 cupAll-purpose Flour or Maida
  • 1Egg
  • 3/4 cupGranulated Sugar
  • 1 tspBaking powder
  • 1 tspVanilla essence
  • 1/8 tspHimalayan Pink Salt
  • 1/4 cupButter
  • 18-20Saffron strands

Steps

25-30 minutes

    Beat Butter and Sugar at first along with an Egg and Vanilla essence and stir in Saffron strands. Now add in the dry ingredients and mix. Do not knead. You just need to bring everything together. That's it. Refrigerate this Cookie dough for about 5 minutes with a lid on. Preheat the oven on 160° and set the timer for about 20 minutes. Meanwhile keep a butter paper lined baking tray ready.

    In the meantime, scoop out an Ice-cream scoop full of the Cookie dough onto a parchment lined baking tray. Using of an Ice-cream scoop is highly recommended by me because you get nice equal dollops of Cookie dough onto the tray thereby resulting in equal sized Cookies. Keep a little distance between each of them.

    Bake for about 18 to 20 minutes or a little more depending on your oven. Cool them a bit before digging in. Crunchy and healthy Cookies are all ready. A bit crunchy too, these are a treat to your tastebuds.
