Here's a new healthy tart recipe! This time, instead of using Greek yogurt, I chose cottage cheese. I love this cheese, and it's perfect if you're watching your diet. I also tried a new whole wheat puff pastry and really liked it, but I wish I could find it as a pie crust!

Here's a new healthy tart recipe! This time, instead of using Greek yogurt, I chose cottage cheese. I love this cheese, and it's perfect if you're watching your diet. I also tried a new whole wheat puff pastry and really liked it, but I wish I could find it as a pie crust!

Prepare the vegetables: Cut the zucchini and carrots into ribbons, and thinly slice the onion and bell pepper.

In a hot skillet, sauté the vegetables with a little olive oil, salt, pepper, and curry powder. Set aside.
Preheat your oven to 400°F (200°C).

Whisk the eggs with the cottage cheese. Once the vegetables have cooled, mix them with the cheese. Add salt, pepper, and a little cilantro if needed.

Roll out the pastry in a tart pan and prick the bottom with a fork. Pour in the cheese and vegetable mixture.
Bake for 35 minutes.
