Ingredients

1 Hour
  1. 2 tbscanola oil
  2. 1/4 CUPDRIED ONION
  3. 4 tspminced garlic
  4. 1small can chipotles in adobo
  5. 1 tspdried oregano
  6. 1 tspsalt
  7. 1 candiced fire roasted tomatoes
  8. 1large boneless chicken breast

  1. 1

    Heat oil in a large pot, add garlic, canned tomatoes, chipotles, oregano and salt. Cook for 1 minute, then add the dried onions.

  2. 2

    Add chicken breast, and simmer until the temp reaches 165 degrees, or about 25 minutes.

  3. 3

    Transfer the chicken to a large bowl, and shred the chicken breast with forks. Stir the shredded chicken breast meat back into the pan with tomatoe sauce.

  4. 4

    The chicken tinga meat and sauce can be served on tortillas, in a rice bowl, or in a whole wheat penne pasta bake.
