Low Effort Red Lentil Vegetable Soup

This is recipe is great, if you are looking for a low effort, nutritious soup.

Tips:
💡 I like my soup almost like a puree. If you prefer less chunky texture, add more hot water gradually. While adding water, check the salt and add in if neccessary.

💡Adding cumin will help you eliminate the gasiness of lentils (funny but true and easy on the stomach 😉)

💡If you prefer a lighter recipe, I recommend only using olive oil and skipping step 7 & step 8.

Ingredients

  1. 2 cupsred lentils
  2. 2medium russet potatoes
  3. 2large carrots
  4. 2 tablespoonstomato paste
  5. 1/2yellow onion
  6. 2 tablespoonsbutter
  7. garlic powder
  8. salt
  9. Italian seasoning
  10. Black Pepper
  11. Cumin
  12. Turmeric (optional)
  13. Italian seasoning (optional)
  14. Dried mint (optional)
  15. 1 tbspOlive Oil

Cooking Instructions

    Rinse the red lentils.

  2. 2

    Peel potatoes, carrots and onions. Cut them into pieces, large pieces are fine. I cut each veggie into 4.

    Toss all veggies including lentils into the pot. Add water. All veggies should remain under the water.

    Let it boil and add all spices and salt.

  5. 5

    Reduce the heat and add olive oil. Let it simmer until all veggies are cooked.

    If you prefer a lighter recipe, I recommend only adding olive oil and then mixing in the tomato paste.

    Use a blender to blend your soup.

    In a separate sauce pan, melt the butter with tomato paste. Stir it until the mixture becomes homogenous.

    Add the butter tomato paste mixture into the soup.

  9. 9

    Let it rest for 5 minutes & enjoy your soup
