Choshi Payesh / Kheer is a rich winter delicacy enjoyed all throughout winters .
Payesh ( kheer ) made of Choshi , Choshi is hand rolled small small grain type made out of rice flour and sun dried.
Prepared with Date Palm jaggery.

Choshi Payesh / Kheer is a rich winter delicacy enjoyed all throughout winters .
Payesh ( kheer ) made of Choshi , Choshi is hand rolled small small grain type made out of rice flour and sun dried.
Prepared with Date Palm jaggery.
Steps

First roast Chushi grains in ghee.

Roast under medium flame till golden brown, it takes around 4-5 minutes and keep aside.

In pan add milk, wait for a rolling boil.

Simmer milk for 5-6 minutes under medium flame.

Now add fried Chushi grains and keep stirring to avoid lumps. Cook under medium flame for 12 - 14 minutes and milk starts thickening.

Now add jaggery and mix well, gradually jaggery melts and cook for 3 - 4 minutes.

Simmer for 2-3 minutes and its ready, no need to thicken more as after cooling it will thicken more.

After 1 hour serve in individual bowls / cups and it is ready to serve.
