No meat for forty days after Mardi Gras is an old tradition in our family, my pantry is full of wonderfull ingredients to make delicious family meals without meats.
This is my potato fish dinner salad favorite. See also our other fish recipes in here: Cured salmon is a delicacy. Smoked fish is another. Deep fried crispy fish is another. Salmon omelettes are always a dinner hit. Fish soup, bouillabaisse, is a meal in itself. Shrimp salad in avocados, a winner. Steamed trout on scallions. Since most fish is mild in flavor, the sauces and cures make all the difference. Follow them in my recipes, adjust them to your taste, let me know. Easy to have a full week of different dinners and never miss the meat.

Ingredients

1 hour fish cure, 1 hour prep
2 people, 8 meals
  1. 3 cupspotatoes, bite size pieces,white, yellow, or red, skin on
  2. 2fresh or smoked trout or other white fish, 4 cups after fileting
  3. 1/2 Cuprice wine,1/2 cup cane sugar, 1/2 cup water
  4. 1chopped red onion, 2 cups
  5. 1chopped granny smith apple, unpeeled, 1 cup
  6. 1chopped ripe avocado, 1 cup
  7. 1/2peeled cucumber, diced, 1 cup
  8. 3 Tbshome made mayonaise (see recipe in here)
  9. 1 Tbstomato paste
  10. 3hard boiled farm eggs
  11. Tbsfresh parsley
  12. Tbsshredded fresh ginger
  13. Tspground green pepper corns
  14. Pinchsalt to taste, or tsp vinegar
  15. Cost: 2 trouts, $2, other ingredients $4, eggs $1, less than a dollar per meal

Cooking Instructions

1 hour fish cure, 1 hour prep

    Poach whole fresh white fish 2 minutes, filets come right out of skin and bones, cut in bite size pieces, marinade an hour in 1/2 cup vinegar, 1/2 cup water, 1/2 cup sugar. Makes four cups. Cut smoked fish bite size.

    Wash, cut potatoes in bite size pieces. Very important: start potato pieces in cold water, bring to boil, boil 8 to 10 minutes, so all sizes and kinds are soft. Drain. Mix with bite size cucumber, apple, diced onions and avocado. Add herbs, spices, fish, shredded ginger. Mix with home made mayonaise, tomato paste and chopped parsley. Decorate with 3 boiled eggs and butter lettuce. Serve cold. Enjoy.
