Ingredients

  • 6 Tbsground beef
  • 6 Tsptaco sauce
    California Farm Achiote, Adobo and Taco Sauce
  • 6 Tbsrefried beans
    California Farm Black Refried Beans
  • 3 Tbspico de gallo
  • 3 Tspfinely chopped jalapeno peppers
  • 3 Tbschopped celery leaves
  • 3 Tbscheddar cheese, grated
  • 3wedges Mozambi lime
  • 3 Tbsyoghurt or sour cream
    California Farm Greek Yoghurt and Bokashi Whey
  • 5small blue or white corn tortillas
  • 1/2 Tspseasalt
  • 2 skillets, cheese grader, masher, hatchet, 11 inch platter for serving
  • Cost: beef 33 cents, beans 15 cents, avocado 80 cents, cheese 67 cents, yoghurt 20 cents, tomato 30 cents, onion, other 30 cents, oversize lunch $2.85

Steps

    Start with reheating refried beans in a warm skillet.

    In second skillet, measure the beef ingredients: six tablespoons beef, six teaspoons taco sauce. Sautee the beef in dry low heat skillet with salt till meat releases its juices, about ten minutes. Set meat aside, use juices to fry tortillas in.

    Buy or make tortillas: make masa dough, press five tortillas. Fry in juice from sauteed ground beef till fragrant, set 3 aside, fry two others till crispy for tortilla chips.

    Grate the cheese, make the pico de gallo

    Make the guacamole from fresh avocado

    Layer the tostada salad as follows: 3 tortilla shells on the bottom, 4 Tbs of refried beans on top, layer of 6 Tbs sauteed beef on top.

    Topped with pico de gallo, grated cheese, chopped celery leaves, chopped jalapeno pepper, yoghurt and guacamole. Garnish with pieces of freshly made tortilla chips. Add lime wedges. Enjoy.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
