Wild rabbit in pressure cooker

Cooking Instructions

Cut the rabbit in small pieces and put in water for 1-2 hours, change the water 2-3 times. Put the rabbit in boiling water for 10 minutes, after that put it out of water until dry, cook fry the rabbit pieces with olive oil until red color.

Prepare separately the onions, tomatoes, carrots, red paprika, 4-5 garlic kernels, chopping them.

In a pressure cooker fry initially the chopped onions will olive oil, add step by step add garlic, carrots, tomatoes, red paprika, a spoon of butter, and cook for 5 minutes. Add a glass of white wine, after that add the rabbit pieces, chili peper, oregano, rosemary, a glass of water.

Let it cook under pressure for 35 minutes medium heat. Enjoy

I learned this recipe from a friend of mine in Okinawa. But the only problem was that it didn't suit well with my everyday chores. I decided to use the pressure cooker instead of "long hours of simmering", and sure enough, it worked!You can probably do 1 or 2 more times of the boiling and draining process as needed.The meat will have a nicer look if you have it cut rather large.The ratio of sugar and soy sauce is basically 1 : 1 .
