With all the colourful Veggies like Broccoli, Corn, Capsicum, Tomato and Onion, this particular Veg Uttappam does look quite tempting. As the name suggests, it is an evergreen classic Breakfast idea of South India. It looks so colourful with all those array of beautiful colours which it gets from the Veggies being used in it. A healthy option for the essential meal of the day - the Breakfast. As goes the saying that, eat Breakfast like a king, Lunch as a queen and your Dinner as a beggar. Uttappam is surely a meal with complete goodness and provides us with all the energy needed for the day ahead.

And blanched Broccoli adds that little bit of spark to the healthy Breakfast. This also makes it a special one. Broccoli does taste awesome and everyone loved it in my family.

Ingredients

40 minutes
4-5 servings
  • 2 cupsraw Rice
  • 3/4 cupBlackgram or Urad Daal
  • 1 tspFenugreek Seeds
  • 1 tbspBengal Gram or Chana Daal
  • 1 tbspSalt
  • 2 cupschopped Capsicums
  • 2 cupschopped Onions
  • 1 cupCorn kernels
  • 2 cupschopped Tomatoes
  • 2 cupschopped and blanched Broccoli
  • 2 tspRed Chilli flakes
  • 3-4chopped Green Chillies
  • 1 bunchchopped Coriander Leaves
  • as neededGhee or Oil

Steps

  1. 1

    First of all, soak rice and dal seperately in drinking water. Add the fenugreek seeds and bengal gram to the dal while soaking. Soak them for at least 5-6 hours. Grind them seperately using water in which they have been soaked sparingly. Do not use much water. The batter should be semi thick.

    Cover and allow it to ferment overnight. Add Salt in the morning and also some water if the batter is too thick.

    Heat a cast iron griddle or a non-stick pan and pour a ladleful of the batter onto it. Do not spread much. It should be thicker. Followed by the veggies, green chillies or the red chilli flakes and the chopped coriander. Drizzle ghee or oil on top and also on the sides. Flip it over and cook if you like more crispier uttappam for 1 more minute.

    Serve them hot right away with any chutney or pickle of your liking.
