Preparing rabdi panna cotta

Firstly, in a large nonstick pan boil milk. Stir occasionally making sure the milk doesn’t stick to bottom of vessel and get to a boil.

Furthermore add 1 cup of condensed milk. add more condensed milk, if you looking for too sweet rabdi.

Stir well and get the milk to boil,also reduce the flame to medium. and once a layer of cream is formed over the milk, stick it to sides of vessel.

Make sure to stir from bottom of vessel so that milk doesn’t burn.

Further, get the milk to boil again and repeat the gathering of cream to sides of kadai for at least 3 -5 times or till milk reduces to one-third.

Add cardamom powder and Saffron.

Also scrape off the collected cream from sides. and give a good stir.

Now stir everything well and allow it to reduce and thicken further for about 10 more minutes.

Along with it in a separate pot mix gelatin powder in water and allow the powder to incorporate well.

Now heat the mixture of gelatin while stirring continuously until a boil.

Add this gelatin mix to the rabdi and allow the rabdi to boil for another 10 minutes. Keep stirring to avoid lumps due to gelatin

Now arrange your mould or dessert cups and pour the mix in each moulds.

Allow it to cool a bit at room temperature for 10 minutes and then cover and refrigerate it.

The pannacotta gets set in the refrigerate after about 4-5 hours.

For Sugar syrup

Firstly, in a kadai add in sugar and water.

Also add in few saffron threads.

Stir and dissolve the sugar completely.

Further boil for 3 minutes or till sugar syrup thickens.

For Shahi tukra

Fry the bread slices in hot ghee till the bread turns golden brown. fry the bread both the sides till they turn golden brown.

And dip both sides of bread in prepared sugar syrup.

Furthermore, in a plate, place Shahi tukra and put upon rabdi panna cotta.

And garnish with chopped pistachio, saffron strands and fresh rose petals.
