Heat a paella pan with a medium-high heat and add in the extra virgin olive oil. Then season with turmeric, peri peri, sea salt and black pepper, add in the squid, the squid heads and tentacles. Stir fry half cook, then remove from the pan and set aside. Add in the onion and garlic into the pan, stir fry until fragrant.

Add on salted butter, onion and garlic. Stir fry until fragrant. Add Rosmarino, stir fry a few minutes, pour the broth and saffron threads. Allow them to cook. Add carrot and peas. Stir fry, add fresh thyme.

Final mix so everything is evenly distributed, after 5 to 6 minutes add in the prawns, the mussels and squids. Then lower the heat to a low-medium and simmer until all the broth has been absorbed by the Rosmarino, then hit back to a medium-high heat to achieve the socarrat, just go between 1 to 2 minutes, then remove the pan from the heat and cover.

Uncover the pan, and garnish the paella with lemon wedges and finely chopped parsley‼️ Let’s enjoy!
