Churn oats for few seconds, just keep a slight grainy texture.

In mixing bowl add oats + semolina + sugar + salt + curd + ginger + green chilli and mix well. Keep the mixture in rest for 10 minutes.

Assemble ingredients for masala, chop cashews.

In moderately heated pan add oil, add mustard seeds + curry leaves and allow to crackle, add Urad + Chana Dal + hing and sauté for 2 minutes, then add carrot + little salt and sauté for 2-3 minutes, just soften the carrot. Let it cool.

Now add the masala to oats mixture and mix well. We need a medium consistency batter so add water if required, lastly add baking soda and mix gently. Batter is ready.

Grease Idli moulds, add 2 tbsp of batter to each mould and steam for around 10 - 12 minutes. Let it cool for few seconds, de mould and Idli is ready.

Serve Oats Masala Idli with your favourite dip, I served with Tamarind Chutney.
