Ropa Vieja from Cocido

We make ropa vieja from cocido using leftover chicken, beef, and chickpeas after preparing a good Sunday cocido.

When I was a kid at my parents' house, we always asked for extra chickpeas in the cocido so we could have ropa vieja the next day, haha.

Steps

30 minutes
  1. 1

Separate the chickpeas. Shred the chicken and beef shank, and cut the vegetables or meatballs into small pieces.

  2. 2

First, heat plenty of olive oil in a skillet and peel the garlic cloves. Sauté the garlic for a couple of minutes, then add the chickpeas and stir until they are fried.

  3. 3

With the chicken already shredded, remove the chickpeas from the skillet and add the chicken. Fry until golden, then remove and place each ingredient on a serving platter.

  4. 4

Next, fry the shredded beef with the potatoes, carrots, and meatballs cut into pieces. After about 10 minutes in the skillet, add the ingredients you have already fried.

  5. 5

Add the chickpeas, chicken, and, if you have any, egg yolks or other cocido leftovers (like chorizo, ham, etc.). Fry everything together, then combine all the ingredients in the skillet. Cook over medium heat for 15 minutes, stirring occasionally so everything blends and absorbs the garlic flavor. Serve and sprinkle with a little ground black pepper. Delicious!
