Ingredients

  • 1onion
  • 1 tspminced garlic (or a couple of chopped cloves)
  • Vegan "minced beef" - see separate recipe (or about 350g of pre-made vegan mince)
    Turn TVP into vegan "minced beef"
  • 50 glentils (any colour)
  • 2 tinstomatoes
  • 1 tinkidney beans
  • 1pepper (any colour)
  • 150 gramsfrozen sweetcorn
  • 2 tbspchilli spice mix - see separate recipe
    Chilli spice mix
  • OPTIONAL: Depending on the TVP you are using, you may want to add some colour with a little gravy browning

Steps

  1. 1

    Chop the onion and add this to a large saucepan with the garlic. Add about a cup of water and simmer for a few minutes while you prepare the rest of the ingredients.

  2. 2

    Prepare the "mince" (see recipe) and set aside while you chop the pepper and gather everything else you need.

    Turn TVP into vegan "minced beef"
  3. 3

    Add the "mince" to the pot, along with all the remaining ingredients and stir well. Use one of the emptied tins to measure out about 400ml of water. Cover the pot and cook for about 30 minutes, stirring occasionally. That's all there is to it!
