A perfect name for a perfect and crunchy Rolls by me. A World known starter dish that's made with umpteen number of variations to date. These Spring Rolls are loved by all. No matter where they come from, it's relished by everyone.
This starter or a snack dish is absolutely amazing. Fried and stuffed thin Pastry sheets or wrappers with some freshly made Dip of your choice or a readymade one is something straight out of heaven. This is pure love.
In these particular one's made for Iftaar meals, I had used boiled Eggs and a few simple spices. That's it. Nothing much complicated at all.
Just fill, roll and then deep fry. You are all done. Delicious and delectable. This will be an added attraction at the Iftaar table for sure. Indulge in these great looking Rolls with your loved ones and friends alike including your special guests and relatives.

First of all, cut all the boiled eggs into small pieces. Heat a tablespoon of Oil in a pan. Add thinly sliced or chopped Onions. Saute on low heat. Also, add ginger garlic paste to it along with the rest of the ingredients mentioned. Saute well and add boiled Egg pieces to it. Mix well. Keep aside until use. This is the filling or the stuffing.

Add a tablespoon of this filling to each of the Samosa Leaves. Prepare all the Samosas in the same way. Deep fry few at a time on a medium high heat until crisp and done.

Serve these scrumptious Egg Spring Rolls or Egg in a Blanket as named by me with Tomato Ketchup or any other Dip of your choice. Enjoy!
