Veg. Dum Biryani

The most familiar and loved rice variety.
Dum is derived from the Persian word Dumpukht which means air-cooked or baked in handi. It doen't have any handles and is the vessel of choice for "dum' cooking. To "dum" cook a biryani, the meat, rice and spices are layered in a handi.

Under Cook (80%) soaked rice by adding 2 cloves, 1 small stick of cinmamon and little salt. Drain with cold water bath and keep aside.
Take 2 tbsp ghee in a pan, add jeera and all the remaining khada masala. Add french beans, carrot, peas and cook for 2 minutes. Add cauliflower, cook for 1 minute. Now add onion and saute for 2 minutes. - 2
Add all the dry masala, mint leaves. Stir it and switch off the stove. After 1 minute add beaten curd. Mix it well.

In a handi pour some cooked veg gravy and top up with cooked rice. Drizzle saffron milk and fried onion. Make 3 similar layers and on the top pour little veg gravy. Now seal the lid with dough and place on tawa on low flame for 25-30 minutes. Once done switch off the stove.

Now lit the charcoal nicely, place in a small bowl and put in the handi and pour 1 tspn ghee and cover it with lid/ dish for 10 minutes.

Serve hot and delicious Biryani with raita, papad and lachha pyaz.
