Bathua is a healthy green leafy vegetable available during winters. It can be used to make many different dishes. Bathua raita is a quick and easy recipe which tastes delicious served with paratha, puri etc.

First of all collect bathua leaves by removing it from its stems. You can keep tender stems. Now wash the leaves and blanch it in boiling water for 2 minutes. Take it out and add it to chilled water so that we can retain the green colour. When it cools down, grind it to a paste.

Take yoghurt in a bowl and whisk it. Now add salt, black salt, cumin powder and red chilli powder. Mix it. Add bathua paste and give it a good mix. Cover and store it in the refrigerator until use.

Serve bathua raita whit paratha or puri. It can be served as a side dish with your main meal.
