Ingredients

  • 1serving spaghetti
  • 2-3 clovesgarlic, sliced
  • 2-3dried red chilies, sliced
  • About 1 handful chopped parsley or cilantro
  • 2 tablespoonsolive oil (30 ml)
  • 1 piecebutter (about the size of your thumb, 1 tablespoon/14 grams)
  • Sea salt or salt
  • Black pepper
  • Lemon

    Cook the pasta first. Have you heard the Italian saying? 'The water for cooking pasta should be as salty as the sea.'

    Once the water boils, add 2 tablespoons (about 30 grams) of salt to make sure it's salty enough, then add the spaghetti and cook for 9 minutes until al dente. If you prefer softer pasta, cook 1-2 minutes longer.

    With about 3 minutes left on the pasta, heat the olive oil over medium-high heat. Olive oil is the soul of this dish, so don't be afraid to use a little extra.

    Watch the color of the olive oil—it will darken slightly as it heats. When it's hot, add the butter, garlic slices, and dried chili. Lower the heat to medium-low. You'll smell the aroma of garlic and chili. When the garlic turns golden, your pasta should be ready.

    Use tongs to transfer the pasta directly into the pan. Add 1 tablespoon (15 ml) of pasta cooking water. Toss until each strand is coated with olive oil. Add the chopped parsley or cilantro. Reduce the heat to low and toss until the pasta is evenly coated, then turn off the heat.

    Squeeze in some lemon juice and toss to combine. Alternatively, you can serve with lemon slices on the side so everyone can add as much as they like.
