Steps

In a plate mix pinch of Asafoetida (hing), coriander powder, garam masala and red chili powder together.

In another plate, mix besan flour, coriander leaves, salt and fine semolina together.

Make thin slices of brinjal and apply little salt on both sides of the brinjals.
Sprinkle some spices over the brinjal slices and coat them well. - 4
Take the brinjal slices one by one and slightly press it in the besan and semolina mixture so that the mixture will get nicely coated to brinjal slices. Keep aside.

Heat little oil in a frying pan/tawa and arrange the brinjal slices on the tawa and fry on both sides until they become crisp and golden in color.
