Ingredients

1 serving
  • 1 can (125 g)Mackerel in Brine
  • 1/4-1/2Onion *thinly sliced
  • 1small clove Garlic *finely chopped
  • 1/2 teaspoongrated Ginger
  • 1 teaspoonOil
  • 1 teaspoonCurry Powder
  • 1/2-1Tomato *cut into small pieces
  • 2 tablespoonsSake (Rice Wine) OR Water
  • 1/2 tablespoonSoy Sauce
  • 1serving warm Cooked Rice

Steps

  1. 1

    Drain the Canned Mackerel and discard the brine. Break into bite-size pieces.

  2. 2

    Heat Oil in a small frying pan over a medium heat, cook sliced Onion and Garlic until Onion is transparent. Add Ginger and Curry Powder, stir, then add Tomato and Sake (OR Water).

  3. 3

    Add Soy Sauce and Mackerel, simmer over a low heat for a minute or so, stirring occasionally.

  4. 4

    Half fill a bowl with warm Cooked Rice and cover it with the Mackerel Curry mixture.

Thank you, Karl, for trying this recipe. Using the canned mackerel in tomato sauce is a great idea. I always buy mackerel in brine because of the versatility, but for a curry flavoured dish like this one, mackerel in tomato sauce would be perfect. I will try it next time. Thank you for the inspiration.
