Ganthiya is popular Gujrati fried snack. There are various types of Ganthiya available in market. In this recipe Bhavnagari ganthiya is used along with buttermilk. This dish is a little unusual and typical, prepared by Jain community often. In Jain community's religious festival Paryushan, they are bound from eating green vegetables. So that time such dishes are prepared. Though there is another Kathiyawadi version of this dish prepared using onion-garlic. This is also the best option, when we are running out of vegetables and time, because it can be prepared in a jiffy.
Today, I have prepared Gantgiya nu shake without onion and garlic, jain version.

Steps

Take curd in the pan and turn on the heat and keep it till it becomes hot. Then turn off the heat. Blend it well and keep it aside.

Heat the oil in the pan, add asafoetida and little red chilli powder, followedby adding 2 cups of water.

Once water start boiling, turn the flame slow and add curd and keep stirring till water and curd incorporate well.

Then add all the spices and salt and let it boil.

Lastly add ganthiya, mix and cook for 2 minutes and turn off the heat.

Serve immediately. Add ganthiya only at the time of serving.
