Cooking Instructions

Soak the oats in water until they soften. When stirring, the oats should be slightly gelatinous, and you should be able to break them with a spoon. (I soak them the night before, so they soak for at least 8 hours by morning.)

Add all ingredients except the butter into a mixing bowl, ensuring the yeast doesn't touch the sugar and salt. Mix until a rough film forms (it can be stretched but still has rough tears), then add room temperature softened butter and mix until a smooth film forms. (If you add all the water, the dough will be quite soft and sticky. If you prefer a less sticky dough, reduce the water by about 2 teaspoons.)

After the first rise, divide the dough into two portions, roll them out, and sprinkle with honey cubes (optional), then roll them up and place them in a baking mold.

Let the dough rise a second time for about 60 minutes until it fills 90% of the mold. Bake at 340°F/375°F (170°C/190°C) for 28 minutes.
