Steps

Soak basmati rice and keep aside for 10 minutes.

In a deep bottom pan, heat ghee. Add cumin seeds, bay leaf, cardamom, cinnamon stick and peppercorns. Sauté.

Add sliced onions and stir. Add ginger garlic paste and sauté for a minute.

Lower the flame, add peas, carrots and chopped tomato. Add salt, red chilli powder and turmeric powder. Cook till ghee starts leaving sides.

Add soaked basmati rice. Add warm saffron milk. Give everything a nice mix. Cover cook for 5 minutes.

Add 2 cups of water and cover cook for another 15-20 minutes. Turn off the flame and let it rest for 5 minutes.

Garnish with fresh chopped mint leaves.

Serve hot with pickle, raita and papad.
