Chole Aloo Dahi Papdi Chaat is a flavourful crispy, tangy and sweet street food and is popular all over India. Yogurt or dahi is very nutritious and helps to keep your body cool during the hot summer months.So adding chilled yogurt to chaat has a cooling effect and makes it all the more enjoyable. Simple kitchen staples are assembled to create this mouthwatering snack.In this recipe crispy fried flat puri or crackers called papdi/ papri are topped with beaten yogurt,boiled chickpeas, potato,onion,tomato, chutneys and spices.Make the papdis beforehand and store in airtight container and use as required. Prepping other ingredients like boiling chickpeas and potatoes,making the chutney beforehand,this chaat can be assembled within minutes and served as a starter at parties or enjoyed as a healthy and nutritious evening snack .

Soak chickpeas (chole) overnight or at least for 5-6 hours. Next day pressure cook chole with 1 cup water, 1 pinch baking soda and 1/2 tsp salt upto 4-5 whistles. The chickpeas should be soft but not mushy.Set aside.Cube into small pieces boiled potato. Chop finely tomato,onion,cucumber and coriander.

For making papdi:
Take 3/4 th cup maida,1/4 th cup wheat flour.Add 1/4 th tsp salt,1/4 th tsp ajwain,1/2 tsp baking powder and 2 tbsp refined oil.Mix well and add 1/2 cup water or as needed and knead into a pliable dough.Cover and set aside for 10 minutes. Later divide dough into 3 parts and roll out a thin chapati. Prick with a fork and cut into rounds with a cookie cutter or lid.Heat oil and fry papris in low flame till crisp and brown.Cool and sprinkle chaat masala and store. - 3
Add 2 tsp powdered sugar to the chilled yogurt.Beat the yogurt with a spoon or whisker.Add some chaat masala,roasted cumin powder,red chilli powder,black salt and tamarind chutney and whisk till smooth.Refrigerate.

For green chutney:
Add 1/2 cup chopped coriander,1 tbsp mint leaves, 1 tbsp plain yogurt, 1 tbsp peanuts,1 tsp lemon juice, 1/4 th tsp chaat masala, 2 garlic cloves, 1 tbsp hot and sweet tomato sauce.Blend well and store.
For tamarind chutney:
Boil 2 tbsp tamarind pulp with 1 tbsp dates pulp.Add 2 tsp sugar,1 tsp roasted cumin powder,1/4 th tsp red chilli powder,1/4 th tsp ginger paste and pinch of salt to taste.Set aside. - 5
For making the chaat :
Arrange 6 papdis in a bowl or plate.Drizzle some yogurt. Top them with boiled potato,chickpeas,chopped onion,cucumber and tomato.Drizzle 1 tbsp each of green and tamarind chutney.Sprinkle some lemon juice,chaat masala, black salt, ground cumin and red chilli powder. - 6
Garnish with chopped coriander,few crushed and whole papdis,some chopped tomato and some yogurt and serve immediately to ensure that papdis are crispy and not soggy.From sour to sweet,and tangy to spicy,this chaat has all the flavors in one dish and perfect for any parties and special occasions. So enjoy this yummy chaat and dig in the flavours with your loved ones at home.
