A super easy and tangy instantly made Podi from the Curry Leaves that are full of Vitamins and Iron. And then used along with simple boiled Rice for a yummy Breakfast is such a wonderful meal of the day. Packed with so much of natural goodness, these Leaves are a great boon. This Podi or Powder made with them is a perfect accompaniment to Dosas, Idlis, Puris and even plain boiled Rice. You can heat a tablespoon of this with an equal quantity of Ghee and serve with a steaming plate of Rice.
It's easily made and a lovely idea for the Breakfast or a lazy Brunch. It's absolutely amazing and looks great too. The best part is that the Curry Leaves Podi can be used for making this yummy Rice on any day. It's so very handy. And that's what I do most of the times.

Ingredients

25 minutes
4 servings
  • 4-5boiled Rice
  • 1/2 cupCurry Leaves
  • 2Dry Red Chillies
  • 2 tbspOil
  • 1 tbspSesame Seeds
  • 1 tbspCoriander Seeds
  • 1 tbspBengal Gram or Chana Daal
  • 1 tspCumin Seeds
  • 2-3chopped Garlic
  • 1 tspSalt
  • 1 tbspDry Tamarind

Steps

25 minutes
  1. 1

    Heat Oil and add Cumin Seeds at first. After a minute, add chopped Garlic and the rest of the ingredients.

    Karuvepaku Podi or Curry Leaves Powder

    Saute all these for one more minute until Garlic is done. The Bengal Gram should also be roasted well. Now add Curry Leaves to it. Saute them until crisp on a low heat.

    Mint and Curry Leaves Dry Chutney or Podi

    Switch off after 4 to 5 minutes of sauteeing. Let it cool down before grinding into a powder. Store this tasty Podi in the refrigerator for about a month. Add a tablespoon of Ghee to a deep pan. Add cooked Rice to it. Followed by the Curry Leaves Podi or Chutney. Mix well and that's it.

    Serve this to your loved ones immediately or pack it in their Tiffin boxes. This combo is heavenly. Yum! Enjoy!
